my daughter just rescued a 7 yo male hes pooping in his sleep and while sleeping his back half will shake and at times his tail moves to please help

We can't diagnose a dog online. However, it sounds like fecal incontinence due to other issues going on with him. You need to take your dog to the vet for a complete assessment.

Here is an by a vet on this topic.

You may consider a diaper for him. You can get washable diapers and put a pad into it. For example, these diapers.
